Coconut Chocolate Treats

Ingredients

1 ½ cups (120 g) desiccated coconut

100 g white chocolate

¼ cup (approximately 60 g) tahini

½ tsp vanilla extract

Directions
- Line a 22 x 12 cm rectangular container with parchment paper, leaving some paper over the edges for easy removal
. - Place the desiccated coconut in a saucepan and toast over low-medium heat, stirring continuously until lightly golden
. - Remove the coconut from the heat immediately and set aside, as it will continue browning while cooling
. - Break the white chocolate into pieces and melt it using a double boiler over gently simmering water, stirring until completely smooth
. - Remove from the heat and immediately stir in the tahini, vanilla extract, and optional pinch of salt until thoroughly combined
. - Add the toasted coconut and mix until it is evenly coated with the chocolate mixture
. - Transfer everything to the prepared container and spread evenly with a spatula, gently pressing it down
. - Smooth and tighten the surface using the back of an espresso spoon, if desired
. - Refrigerate for at least 1 hour, or until the white chocolate has completely set
. - Lift the treat out using the parchment paper, cut into bite-sized squares or rectangles, and enjoy
