Ingredients

  • 1 cup (90 g) rolled oats, blended into a fine flour, or 90 g store-bought oat flour

  • 4 tbsp (40 g) chia seeds

  • ¾ cup (~180 ml) water

  • ¼ tsp salt

  • ½ tsp baking powder

  • 1 tsp dried oregano, or your favourite herb or spice

Instructions

  1. Blend the rolled oats into a fine flour, or use ready-made oat flour.
  2. Mix the chia seeds with water, cover and let them soften for 15–30 minutes.
  3. Add the oat flour, salt, baking powder and oregano, then stir until a soft, slightly sticky dough forms. Add a little extra oat flour if needed.
  4. Let the dough rest for 10–15 minutes while preparing the tray and preheating the oven to 340°F (175°C).
  5. If the dough feels sticky when shaping the rounds, rub a drop of olive oil over your palms to make the dough much easier to handle.
  6. Divide the dough into approximately 30 equal portions, using about ½ tablespoon for each, and roll them into small rounds. Arrange them on a parchment-lined 37 x 25 cm (14.5 x 10 in) tray, leaving enough space between them.
  7. Cover each round with an approximately 8 x 8 cm piece of parchment and press with the flat base of a large glass until the dough is about 5 mm thick and evenly round.
  8. Bake for 15 minutes at 340°F (175°C), then flip each cracker.
  9. Bake for another 15 minutes at 340°F (175°C), or until crisp to your liking.
  10. Avoid over-baking because the crackers will continue to harden while cooling.
  11. Cool completely before serving.
