Ingredients

  • 2 medium-sized zucchinis (275 g)
  • 2 eggs
  • ¾ cup Greek yogurt (160 g)
  • ¼ tsp salt
  • 1 tsp dried oregano, or another dried herb of your choice (optional)
  • 1 ½ cups oat flour (140 g), made by blending rolled oats in a blender
  • ½ tsp baking powder
  • Oil, for brushing the waffle maker

Instructions

  1. Clean the zucchinis and remove both ends. Using the fine side of a hand shredder, finely shred the zucchini.
  2. Using clean hands, squeeze the shredded zucchini thoroughly to remove as much excess moisture as possible. Set the squeezed zucchini aside.
  3. In a large mixing bowl, combine the eggs, Greek yogurt, salt, and dried oregano or your preferred dried herb. Mix vigorously until smooth and creamy.
  4. Add the squeezed zucchini to the egg mixture and stir just enough to distribute it evenly.
  5. Add the oat flour and baking powder. Stir only until the dry ingredients are incorporated, taking care not to overmix the soft batter.
  6. Let the batter rest for 10 minutes. Meanwhile, prepare and heat your waffle maker.
  7. Once the waffle maker is hot, lightly brush both square waffle plates with oil.
  8. Pour the equivalent of a ⅓ cup of batter into each waffle plate, close the lid, and cook until the waffle is nicely browned and completely cooked through, both inside and outside.
  9. Keep in mind that cooking time can vary depending on the brand and capabilities of your waffle maker, so check the waffle for doneness rather than relying only on the cooking time.
  10. Continue cooking until all the batter has been used, making 7 waffles in total.
  11. Let the waffles cool slightly before serving. Enjoy them just like toast bread with your favorite savory toppings.
